This is the recipe that I use for broccoli muffins.
- 150g self-raising flour
- 150ml milk
- 130g broccoli
- 70g grated cheese
- 2 eggs
- 1 tsp baking powder
- 0.5 tsp paprika
Steam the broccoli until cooked and chop into small pieces.
Combine all ingradients in a bowl and mix.
Divide evenly between paper baking cups.
Sprinkle a small amount of cheese on top of each muffin.
Bake for 15 to 20 minutes at 180 °C.
